Shireen Anwer's Recipe (Manpasand Riwayat)

 

Gajar Ka Halwa

Ingredients

Carrots 1 kg grated

Milk 1/2 kg or 2 cups

Sugar 3/4 cup

Banaspati Ghee 1/2 cup

Green Cardamoms 6 to 8

Khoya 250 grams

Pistachios and Almonds 1 tbsp each sliced

 

Method:

  • Cook carrot with milk till dry, and 3/4 cup sugar and cook further till water from it completely dries up.
  • Heat 1/2 cup ghee in another pan, once hot add 6 to 8 small cardamoms, once cardamoms swell a bit pour this ghee in the pot containing carrots. Mix well add 250 grams khoya. Sprinkle pistachios and almonds over it and its ready to serve, you can and cook further if you want.

    Liver Ki Karahi

    Categories: Mutton, Lunch, Dinner, Eid

    Ingredients

    Mutton Liver 1/2 kg

    Tomatos 2 to 3

    Garlic Paste 1 tsp

    Red Chilli powder 2 tsp

    Zeera 1 tsp

    Coriander powder 1.5 tsp

    Yogurt 1 tbsp

    Banaspati Ghee 1/2 cup

    Garam Masala powder 1/2 tsp

    Green Chillies 4 to 6

    Kasuri Methi 1 tsp

    Ginger 1 tbsp julienned

    Method:

  • Heat half cup of water on stove, the add 1 tsp garlic paste to it, followed by 2 to 3 chopped tomatos, let tomatos cook for a while. Then add 2 tsp red chilli powder, 1 tsp zeera powder, 1.5 tsp coriander powder, 1 tbsp beaten yogurt, then add 1/2 kg mutton liver cube shaped to it. Mix well and put banaspati ghee upon your requirement to it. Cooking of liver will only take 10 minutes.
  • Now add 1/2 tsp garam masala powder, then few green chillies, 1 tsp kasuri methi and ginger. After 10 minutes your liver should be prepared. Garnish with fresh coriander and serve hot with naan.
